Overview

The Sommelier / Assistant Restaurant Manager is an integral member of the team that creates distinctively different and authentic experiences for our guests.  You will be responsible to oversee our wine menu and offer recommendations on the best pairings, supervising wine serving, collaborating with winemakers to upgrade selections and provide wine recommendations to guests.  A top performing sommelier understands the winemaking process, and can create exquisite food and wine pairings to delight our guests and exceed their expectations.

Responsibilities

  • Conducted product training on wine service, food & wine pairing, cocktails, and spirits.

  • Engaged with wine and spirit suppliers to source high-quality products for the restaurant's wine program.

  • Assessed and procured wines and other beverages for all hotel outlets.

  • Created and maintained wine lists across all areas of the Lake Nona Wave Hotel.

  • Managed par levels for liquor, wine, beer, and beverages throughout the hotel.

  • Assisted guests with wine recommendations, sales, and ensured overall guest satisfaction.

  • Contributed to the development of new restaurant concepts.

  • Planned and executed wine dinners at BACÁN and GARNI.

  • Collaborated with chefs and managers to develop wine-tasting menus.

  • Provided financial analytics to support operational and strategic decisions.

  • Demonstrated leadership in guest hospitality and service excellence.

  • Supported managers and team members on the floor during meal periods and high-volume times.

  • Ensured consistent adherence to food and beverage service standards.

  • Provided leadership coverage in the absence of the Restaurant Manager.

  • Actively supported and managed the front-of-house team to maintain smooth operations and team morale.

Qualifications

  • 3–5 years of experience as a sommelier or wine professional in a fine dining setting.
  • Advanced knowledge of global wine regions, varietals, and food & wine pairing principles.
  • Certification from the Court of Master Sommeliers (Certified Level or higher) or equivalent preferred.
  • Strong service and leadership skills with a refined, guest-centered approach.
  • Experience assisting with restaurant operations, including supervision of staff.
  • Excellent communication and training skills.
  • POS system experience and basic inventory management proficiency.
  • Prior Four or Five Diamond experience preferred.
  • At least three years supervisory experience expected.
  • Valid Food Handler and Tips Certification required.
  • Availability to work evenings, weekends, and holidays as needed.
