Overview

Are you a culinary visionary with a passion for creating unforgettable dining experiences? As our Chef de Cuisine, you will lead and oversee the entire food service operation across our property, driving innovation and ensuring the highest quality in our culinary offerings. You will spearhead the creative development process, from product conceptualization and menu engineering to recipe development and item costing. Your expertise will shine as you test new concepts, develop product specifications, and implement new menus, all while maintaining rigorous quality assurance processes and systems. theStelle Lodge is a 67-unit boutique mountain property in the heart of the SkyRidge Mountain Resort Community in Park City, Utah, with direct access to Deer Valley Ski Resort’s new East Village. Anchored by fine dining, a full-service spa, a café, and a collection of lake and mountain recreation experiences, the Lodge serves as the hospitality centerpiece of the SkyRidge resort, featuring 469 custom homesites with panoramic water and mountain views, complemented by world-class golf and equestrian amenities.

 

Responsibilities

  • Provide visionary leadership and management of the culinary research and development process from product creation through implementation.
  • Devise innovative product offerings for various venues including main dining rooms, buffets, room service, specialty restaurants, banquets, catering, and themed/special events.
  • Formulate and implement procedural guidelines, policies, and standards for overall food and beverage operations, including menu design, product specifications, cleanliness and sanitation, cost controls for food, labor, and operating expenses.
  • Monitor industry trends and collaborate with internal and external partners in culinary research and development efforts.
  • Manage the creation of menus, preparation instructions, and individual dish specifications by ingredients and corresponding portion sizes.
  • Collaborate with Purchasing to identify and source required products.
  • Develop standards, processes, and tools to ensure consistent delivery of culinary products across both properties.
  • Guide and support the culinary team in implementing and adhering to company standards, processes, and systems.
  • Monitor guest, partner, and internal feedback and take corrective action as required to ensure the highest level of guest satisfaction.
  • Partner with Food & Beverage management to develop and administer formal quality assurance processes, including, audits, secret shopper programs, culinary focus groups, consumer tastings, and customer/operator surveys.

Qualifications

  • Prior experience as a CDC, Sous, or Executive Chef.
  • Possess strength in training and team building programs.
  • Must have experience in the process of creating and implementing successful new concepts.

Salary range: $100,000 - $125,000 + bonus
