Overview

Black Desert Resort is an ultra-premium destination resort in Southern Utah offering elevated dining, luxury accommodations, and curated guest experiences. The resort’s pastry and baking program supports multiple outlets including fine dining, banquets, specialty cafés, and in-room dining, delivering high-quality desserts, breads, and specialty items across the property.

 

The Pastry Sous Chef plays a key leadership role in executing the resort’s pastry vision and maintaining consistency across all culinary outlets.

 

Job Summary

 

The Pastry Sous Chef – Full-Time supports the Executive Pastry Chef in overseeing daily pastry operations, production, and service execution across the resort. This role ensures all pastries, desserts, breads, and baked goods meet Black Desert Resort’s ultra-premium standards for quality, consistency, and presentation.

 

The Pastry Sous Chef leads the pastry team during production and service, supports menu development, and ensures efficient operations across multiple outlets and events.

 

Job Specifications

Onsite: Black Desert Resort
Shift & Schedule Availability: Year-Round / Full-Time
Pay Range: $65,000 – $75,000/year. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.

Responsibilities

Key Responsibilities including but not limited to

  • Assist in overseeing daily pastry production and service across all resort outlets.
  • Lead pastry team members including pastry cooks, bakers, and stewards.
  • Participate in recruiting, interviewing, and hiring pastry team members in partnership with culinary and People Services.
  • Support onboarding, training, performance management, and development of pastry staff.
  • Provide coaching, feedback, and corrective action as needed, including participation in disciplinary processes up to and including termination in alignment with company policies.
  • Ensure all desserts, pastries, and baked goods meet quality, consistency, and presentation standards.
  • Support menu development including seasonal desserts, breads, and specialty items.
  • Execute plating and finishing for restaurant service and special events.
  • Maintain consistency in recipes, portioning, and production processes.
  • Monitor and maintain food safety, sanitation, and HACCP compliance.
  • Assist with inventory management, ordering, and product control.
  • Support labor scheduling and productivity within pastry operations.
  • Maintain organization, cleanliness, and efficiency within pastry production areas.
  • Collaborate with culinary and front-of-house teams to ensure seamless service.
  • Support banquet and event production, including large-scale pastry execution.
  • Uphold Black Desert Resort’s ultra-premium culinary standards.
  • Perform other duties as assigned.

Qualifications

Preferred Qualifications and Skills

  • Minimum of 3–5 years of pastry or baking experience in upscale or fine dining environments.
  • Prior supervisory or leadership experience in a pastry kitchen required.
  • Strong knowledge of baking techniques, chocolate work, plated desserts, and bread production.
  • Experience with high-volume production and multi-outlet operations preferred.
  • ServSafe certification required or ability to obtain.
  • Strong attention to detail, creativity, and consistency.
  • Ability to work flexible hours including early mornings, evenings, weekends, and holidays.
