This position reports directly to the Director of Food and Beverage. Provides strategic leadership and oversight for all culinary operations at Lake Nona Wave Hotel for all  food and beverage outlets and all food preparation and support areas. Accountable for culinary vision, menu innovation, operational execution, financial performance, quality standards, and regulatory compliance. Leads, develops, and mentors culinary teams while driving exceptional guest experiences, operational excellence, and consistent delivery of high-quality food across the property.

• Provides visionary leadership and management of the culinary research and development process from product creation through implementation.
• Devises innovative product offerings for a variety of venues including main dining rooms, buffets room service, specialty restaurants, banquets, catering, and themed/special events.
• Formulates and implements procedural guidelines, policies, and standards pertaining to the overall food and beverage operations.
• Included in this are menu design, product specifications, cleanliness and sanitation, and food, labor, and operating expenses’ cost controls.
• Monitors industry trends and collaborates with internal and external partners in culinary research and development efforts.
• Manages the overall creation of menus, preparation instructions, and individual dish specifications by ingredients and corresponding portion sizes.
• Collaborates with Purchasing in identifying and sourcing required products.
• Develops standards, processes, and tools to assist in delivering consistent culinary products at both properties.
• Guides and supports culinary team in the implementation and adherence of company standards, processes, and systems.
• Monitors guests, partners, and internal feedback and takes corrective action as required ensuring the highest level of guest satisfaction.
• In partnership with the Food & Beverage management, develops and administers formal quality assurance processes including audits, secret shopper programs, culinary focus groups, consumer tastings, and customer/operator surveys.

Qualifications:

• Able to work flexible hours and days.
• Two-year culinary arts degree required.
• Three to five years of management experience in a full service and high-volume culinary operations is required.
• Knowledge of food safety, sanitation, food products, and food service equipment.
• Previous experience maintaining professional and respectful work relationships.
• Strong communication and leadership skills.
• Advanced organizational skills
• Bilingual in Spanish is a plus.
• Serv Safe Certified
• Strong knowledge of proper food handling and sanitation standards.
• Proficiency in Microsoft Office.

• While performing the duties of this job, the team member is regularly required to walk, stand, and sit 6-8 hours per day and may have exposure to basic office supply chemicals.
• The team member is occasionally required to climb and use balance. Additionally, they will frequently be asked to use their hands and arms to reach, carry, pull, and lift up to 25 lbs.  Specific vision abilities required by this job include close vision, distance vision, and peripheral vision.
