Overview

The Sommelier, Beverage Manager is an integral member of the team that creates distinctively different and authentic experiences for our guests.  You will be responsible to oversee our wine menu and offer recommendations on the best pairings, supervising wine serving, collaborating with winemakers to upgrade selections and provide wine recommendations to guests.  A top performing sommelier understands the winemaking process, and can create exquisite food and wine pairings to delight our guests and exceed their expectations.  

Responsibilities

• Product Training Wine service, food & wine pairing, Cocktails and Spirits.
• Engage with wine and spirit suppliers regularly to procure high-quality wines for the restaurant's wine program, while also assessing potential purchases of other beverages.
• Marketing and Beverage Identity, Instagram, Facebook, and internal promotions.
• Create and Maintain Wine List for all areas of the Lake Nona Wave Hotel.
• Create and maintain Par for Liquor/ Wine/ Beer/ Beverage in all areas of the Hotel.
• Purchase all Beverages for the hotel and conduct Spot checks weekly in all areas.
• Conduct Monthly inventory for all area and maintain the price sheets for Beverages.
• Assist guests with wine sales, taking orders, and ensuring guest satisfaction.

• Grow Beverage revenues and project Beverage cost.
• Ensuring the proper purchase of glassware and end of the month inventory.
• Assist with the development of new restaurant concepts.
• Develop wine Dinners at BACAN and HAVEN Kitchen.
• Work with chefs to develop wine-tasting menus.
• Provide financial analytics pertaining to all aspects of the venues.
• Displays leadership in guest hospitality by exemplifying excellent customer service and creating a positive atmosphere for guest relations.
• Assists managers and team members on the floor during meal periods and high-demand times.
• Ensure the agreed standards of food service are always adhered to.
• Performs other duties as assigned.

Qualifications

• A Sommelier Level 11 or higher and strong knowledge of Beverage Purchasing and Inventory systems.
• At least three years of experience in the hospitality industry or related field.
• Familiarity with restaurant management software, like Open Table, Craftable, Micros, Birtchstreet is required.
• Strong leadership and supervisory skills to encourage and build mutual trust, respect, and cooperation among team members.
• Excellent interpersonal skills with a focus on customer service.
• Familiarity with food handling, safety, and other restaurant guidelines.
• Meticulous attention to detail.
• Present themselves in a professional demeanor.  Articulate with ease of communication in an upscale setting.   
• Demonstrates honesty/integrity and models appropriate behaviors by leading by example and serving as a role model.
• Great communicator. Providing extraordinary experiences.  Requires the ability to communicate fluently in English both verbally and written.  

 

Experience, Education, & Licensure:

  • High school diploma or equivalent required.
  • Two or four year degree in hospitality related field preferred.
  • At least 5 years of beverage experience required.
  • Prior Four or Five Diamond experience preferred.
  • At least two years supervisory experience expected.
  • Valid Food Handler and Tips Certification required.
