CoralTree is seeking an exceptional Director of Restaurants, Bars and Events to join our team and play a vital role in shaping the success of Hotel Polaris, which is certain to be an instant icon in the hospitality landscape. This leadership position manages the daily operation and optimization of food, beverage and event revenue; selecting, training and developing team members; establishing and maintaining quality product and service levels while maximizing profits; forecasting and budgeting. Also vital to this role is the ability to ensure compliance with health, safety, sanitation and alcohol awareness standards and liquor laws, while maintaining high standards of food and beverage quality, service and marketing to maximize profits and deliver remarkable guest experiences. • Lead the build out and launch of six dynamic food and beverage outlets as well as a robust banquets and catering department.
• Manage the staffing, training, and day-to-day activities of the banquets, restaurant, and bar staff.
• Work in close partnership with the marketing and revenue management to develop compelling POS offers, promotions and marketing campaigns to increase demand and revenue generation.
• Develop, implement, and manage the department's business plan and budget; continually analyze, forecast, monitor and control labor and food costs
• Inspire a culture and passion for working hard, having fun, delivering genuine hospitality and creating memorable culinary experiences for guest’s worth sharing.

The ideal candidate will be:

• Experienced with 3 or more years as a Director of Food & Beverage preferably in an upscale/luxury resort environment
• Experience in pre-opening/opening a new hotel within food and beverage discipline is highly preferred
• Experience in a comparable AAA Four Diamond/Four Star hotel or higher is highly desired. 
• Requires advanced knowledge of the principles and practices within the food profession. This includes experiential knowledge required for management of people and/or complex problems and food and beverage management. (front and back of the house)
• Knowledge of hotel operations, including marketing plans, security and safety programs, personnel and labor relations, preparation of business plans, repairs, maintenance, budget forecasting, quality assurance programs, hospitality law, and long-range planning.
• Basic knowledge regarding local laws regarding liquor and food service.

Salary range: $130k-$150k + 20% bonus
